Fresh Basil leaves
1 handful of walnuts
1/2 a zucchini
1 handful of carrots
2 cloves of Garlic
yummy glazed veggies are super easy my friends!!
Preheat the oven to 400″
Slice the beet and zucchini , as thinly as possible * I used a mandolin to slice the beets ( i kept the skins on ) and the zucchini.
cut the baby carrots into quarters.
Dice a handful of basil leaves and 2 cloves of garlic.
place your chopped veggies,walnuts and herbs in a bowl.
Toss in a bit of coconut oil, 1 tbl spoon of maple syrup and 2 tablespoons of agave syrup and sea salt to taste.
After mixing place in a oven safe dish and bake for 20-25 minutes making sure to rotate half way through.
* Know your oven! make sure to keep an eye on what you’re baking,regularly stirring will prevent the vegetables from burning.
Newer ovens may require less time, so keep an eye on those puppies ! : p
