Spicy plantain and oat “sausage”

2 PLantain
1 shallots
1/3 red hot pepper
black pepper to taste
salt to taste
coconut oil
garlic 2 cloves

add 1/2 a cup of oats, and 1/4 cup of flax seeds to a bowl slowly stir in water until a smooth consistency is achieved. Set aside to thicken. ( add in thyme, salt and pepper)
In a pan sautee the shallots, hot pepper and garlic in coconut oil on med-high heat. Once they appear to cook down a bit, add more coconut oil.
It’s time to toss in the sliced plantain. On medium heat stirring occasionally until they start to brown.

For instructions on making the sausage please see the douggie burger. I used the same process, but changed the shape of the “meat”.

how do you to pick a plantain? Depends… how do you like em?

-Choose semi-ripe plantains, which appear mottled brown and yellow, for a less sweet flavor that’s not as bland as green, unripe plantains. Deep fry thick slices in this stage.

-Purchase fully ripe plantains, which turn to a dark black color, for a sweeter taste.

-Consider buying overripe plantains, when their black skin assumes a white sheen. Although they appear rotten at this stage, they peel easily and taste their sweetest. When overripe, plantains turn caramel as they cook.

… I tend to prefer under ripe plantains but i’m weird… so use your discretion and choose what you like!

The “douggie” Burger

WOw … just blown away with this one!

So a friend of mine told me about  a veggie burger someone  had made for her . She explained it was the “meatiest” veggie burger she’s ever had!  delicious and filling.

From her description of how she thought they were made … I attempted them with my own twist! I just couldn’t wait for the recipe ; p

I must warn you this recipe yields 2 patties ( I was experimenting, and so double up if need be  )

1/2 cup of Oatmeal ( ….. get ready to have your mind blown!!)

1/4 cup of fresh herbs…. be adventurous! I used fresh thyme and basil = wicked combination ; p

1/3 cup of red onion…. or any kind you like

3 tablespoons of chia seed * Chia acts like an egg ( in other words   the bonder or glue that holds it all together )… so you’ll be able to tell if you need more , adjust accordingly.

2 splashes of almond milk

Shred in a vegetable of your choice .. I went with yellow zucchini mmm …

1/3 cup of vegetable stock

Coconut oil, vegan margarine ,grape seed oil for sautéing

Braggs ( soy sauce, or sea salt to  taste)

I love you oats

…Because as a wee one you relieved my ever so ichy chicken poxy skin.

…Because you provide me with  a completely  full belly

….Because said full belly is also properly nourished by your protein and fibre.

……Because you’re a great option for those looking to reduce their colesterol  …Ooh ! and don’t forget our diabetic friends!

….Because you give me B1 and magnesium

Douggie Burger

Start by sautéing the onions and herbs w oil of choice and a few splashes of braggs.

Remove from heat  shred in the zucchini and add in the oats.

stir in the almond milk and chia seeds.

You’ve worked hard so far… So go hang out for about an hour. Read a book, Ride a bike ,do a dance…. just distract yourself for an hour ; p

After an hour of sitting uncovered at room temperature… it’s time to get your veggie stock brewing : )

Form patties in the palm of your hand and add them to the brewing broth.

allow the burgers to hang out for about 7-10 minutes, taking time to flip occasionally

Remove from broth and serve!

Such a delicious and unlikely combination… Sadly, I wouldnt recommend putting them on the BBQ but these puppies are packed with flavour!

… I shall call this the Douggie burger.

Heya!

So what did you have for breakfast??? oh yeah… sounds boring!

Get ready to be jealous of my tasty breakfast, that could totally work for an easy snack too!

on to the greedients!

( serves 1)

Half of a frozen banana( trust me frozzen gives it an extra somethin somethin’ its nice and cold  : ) * you can also save the other half for the next time you make this ; p

1 cup of almond milk

1 heaping teaspoon of crunchy peanut butter.

1/2 cup of oats ( I used Love grown oat clusters…. as you can see from their site they have many flavours , the particular one i’m using is toasted oats with honey , agave , flax , vanilla and cinnamon! delicious!)

OK super easy!

Toss your frozen banana, milk and peanut butter into your blender. Blend until smooth. * don’t worry frozen bananas won’t hurt your blender! I promise!

add the liquid to the oats stir it up and you’re ready to enjoy!!

SO, what’s the deal with breakfast anyways?? To be honest , I don’t often want to eat until 1 or  2 o’clock, I know it’s bad and so i’m trying to get my body used to “eating early”… in the long run it’ll give me more energy  and  probably make me hungrier through out the day… but small snacks often seems to be the correct way to eat anyways ; p

What’s my point here … i’m rambling….

Ah yes! So I wanted to share with you some reasons why  WE ALL SHOULD eat break fast!

-First of all Breakfast (  *love etymology….)  comes from the latin  disieiunare “to breakfast,”as in ending the cycle of fasting you entered while dreaming of …good things : ) And because of this eating in the morning increases the metabolic rate, which helps you to burn calories . Whilst not eating in the morning tricks your body almost into survival mode and the next meal you end up eating , your body tries to hold onto the nutrients instead of using and burning the fuel right away. In short , eating breakfast is clearly a good idea! It promotes a healthy metabolism and helps to burn fat.

…….. and don’t worry if you find yourself “hungrier” throughout the day… all it means is you’re burning more! : )
