CREAMY AVOCADO DRESSING

Ingredients

1  ripe avocado

1 3/4 cups of oil (olive, veetable , saffron or coconut)

2 table spoons of sesame oil

1-2 small  cloves  of garlic

Super easy friends!

Combine all ingredients in a blender and blend until a smooth consistency is achieved!

Jazz up salads , andy vegetables really…  or as shown in the picture bellow, I have added it to THE DOUGGIE BURGER  Super delicious!

Merry Mango Melange Salade

delectable combination

red onion 1/2

fresh cilantro 4-5 stalks

blueberries 2 hand fulls

mango 1/2

Brussels sprouts( chopped) 4-5

tomato 1-2

1 clove of garlic

lime juice a few splashes

olive oil 2 tbls

white vinegar 2 table spoons

 

Wash and cut up the brussels sprouts into thin strips , toss in a bowl. Wash and chop up red onion, tomatoes and mango and add to the bowl.

remove the leaves from the cilantro , wash and chop.

In a separate bowl and the olive oil , vinegar and lime juice ( plus some salt to taste if desired.) mix and toss in the rest of the fruits and veg.

 

Ready to serve as a side or double up and enjoy yourself a nice big and refreshing  salad!

 

Spicy plantain and oat “sausage”

2 PLantain
1 shallots
1/3 red hot pepper
black pepper to taste
salt to taste
coconut oil
garlic 2 cloves

add 1/2 a cup of oats, and 1/4 cup of flax seeds to a bowl slowly stir in water until a smooth consistency is achieved. Set aside to thicken. ( add in thyme, salt and pepper)
In a pan sautee the shallots, hot pepper and garlic in coconut oil on med-high heat. Once they appear to cook down a bit, add more coconut oil.
It’s time to toss in the sliced plantain. On medium heat stirring occasionally until they start to brown.

For instructions on making the sausage please see the douggie burger. I used the same process, but changed the shape of the “meat”.

how do you to pick a plantain? Depends… how do you like em?

-Choose semi-ripe plantains, which appear mottled brown and yellow, for a less sweet flavor that’s not as bland as green, unripe plantains. Deep fry thick slices in this stage.

-Purchase fully ripe plantains, which turn to a dark black color, for a sweeter taste.

-Consider buying overripe plantains, when their black skin assumes a white sheen. Although they appear rotten at this stage, they peel easily and taste their sweetest. When overripe, plantains turn caramel as they cook.

… I tend to prefer under ripe plantains but i’m weird… so use your discretion and choose what you like!

Makes 1 regular loaf pan… I was able to stretch it out and make 2 lil cookie cutter loafs , which was kinda fun! Great for a snack on the go.

Keeps at room temperature for about a week and a half.

Things you”ll need :

2 cups whole whear  flour

3/4 cups  unrefined cane sugar

1/3 of a large zucchini

3/4 t. baking soda

3/4 t. salt

3/4 t. cinnamon

1/2 cup almond milk or soy milk

1 t. apple cider vinegar

2  mashed bananas

1/4 cup canola oil

2 T. maple syrup

Pre heat oven to 350

Prep

Place all dry ingredients in a mixing bowl. Mash and mix in the bananas. Dice the zucchini and toss in. *** it’s important to note that the zuchini retains water, which means you don’t want to add too much or your bread will be too moist and ruined : (

Mix in the wet ingredients until a smooth consistency is achieved.

Grease the pan with coconut oil and smooth the mixture evenly across the pan.

Bake it

place in the oven for 1 hour, making sure to rotate and check on it of course ; p

Not sure if it’s done? stick a knife or tooth pick in the centre and if it comes out clean, you’re good to go!

Easy Breakfast “muesli”

WWVD   for breakfast?

well  although we are not as limited as most people might believe, vegan or no vegan oatmeal is a great way to start the day!

So this is  something  I tried this morning ( prepared over night) but absolutely loved!

Did you know that you don’t have to cook your oatmeal?

I put  a portion of  rolled oats into a tupperware and added  a hand full of dried cranberries  , some chia seed as well as some fresh blackberries.

( add whatever you like!  … ** if you want banana wait til the morning to add it in ** : )

I then covered the mix with almond milk… you really want to put in a fair amount! make sure the almond milk covers everything!!

Leave it in the fridge over night

…..and booom!  

you have a tasty,healthy and  wonderfully filling  breakfast all ready for you in the morning . : )

The idea comes from an old swiss breakfast idea ;  muesli which is typically made with yogurt, oats and berries. This recipe was invented in the 1900s  before pasteurisation and refrigeration  became commonly available . At this time the oats were also soaked overnight in water to ensure they would become soft enough to eat.

You can definitely do so  in lu of a milk substitute ; with water or even juice to give a sweeter flavour!

You can definitely use a yogurt substitute… or the real deal if that’s part of your diet.

This is just  an example of an easy and satisfying vegan breakfast option.

Stay tuned as I will be introducing more interesting breakfast  suggestions : ) … after all It really is the most important meal of the day.

Not to get too hippy on yah  , but i’d like to share with you  an old proverb I learned from a wise yogi that helps to remember the importance.
